200 SLM Contursi Terme and Sicignano degli Alburni, Cilento National Park, Vallo di Diano and Alburni.

 

VINIFICATION AND AGEING

Manual selection of grapes, with complete disarpaturing, fermentation at controlled temperature and maceration of about 20 days. Malolattica in steel. Aging for 12 months in French oak barrels and 6 months in bottle.

FOOD PAIRING

Excellent with dishes of fat and creamy trend, such as game, roasts, braised meat and stews.

It also goes well with fusilli or cavatelli in castrato sauce, aged cheeses and fatty meats such as Colonnata lard. Excellent with cicoli.
